At O’Tooles Bistro & Pub at Cass Lake, as with our sister restaurant O’Tooles Royal Oak, we believe in keeping Michigan dollars in Michigan. That’s why we do all of our purchasing with local purveyors that supply Michigan products and in turn support Michigan growers, farmers, ranchers and other local artisans.
 Economic studies have proven that money spent locally, with Michigan based companies, has a strong positive impact on all of us. A higher percentage of money spent with local companies tends to remain in a smaller geographic zone than money spent with national (and global) corporations with offices and headquarters outside of Michigan.
We are here in Michigan because we choose to be. Not because of tax credits or incentives. We grew up here. We remain because we believe in Michigan and Michiganders.
We also understand that things are still tough for the vast majority of Americans. Michiganders especially. But we here in Michigan are a tenacious  bunch and we will weather this economic muddle we find ourselves in. O’Tooles New Healthier Options


Fresh Jumbo Oven Roasted Wings
We purchase our wings fresh from a local supplier, marinate them in house with our own special blend of herbs and spices. At O’Tooles we actually prefer the oven roasted wings over the classic deep fried buffalo style. The roasting seems to present a more intense flavor profile and presents a juicier wing. The current preference of the kitchen crew seems to be a unanimous two thumbs up for the oven roasted with the new “Dry Sonora” finishing rub.

Tuscan Hummus
A blend of chick peas with white tuscan cannelini beans and tahini give this hummus a rich creamy texture. Adding smoked hungarian paprika to the mix brings this hummus to new heights.
Veggie Lettuce Wraps
Asian style vegetables with roasted tofu in a toasted sesame marinade is elevated with a touch of chili and ginger. Crisp leaves of romaine lettuce provide the perfect vehicle to transport this fusion style dish.
Turkey Burger
The alternative to a beef burger without going all the way with the Vegan Veggie Burger. Some of our guests have switched over from the beef burger already. You be the judge.
Fish or Veggie Tacos
Either house marinated mahi mahi or roasted vegetable blend is the only choice you have to make. Each is stuffed with healthy slaw, avocado, pico di gallo, and cilantro and then kissed with lime. The black beans veracruz style finished with the uniquely mexican epazote herb and the side of whole grains & lentils make this a healthy palate satisfying south of the border entree.
Fresh Salads
O’Tooles variety of salads include a new “Greek Antipasto” and “The Traverse City Salad”. Any of which can be paired with a grilled salmon fillet, a grilled chicken breast, or a grilled shrimp skewer for a nominal charge. The new "Healthy Slaw" offers an excellent alternative to our classic creamy slaw. The shredded cabbage with carrot, spinach, zucchini and yellow squash presents a tasty blend for our vinaigrette with red wine vinegar and extra virgin olive oil.
Lunch Time Sandwiches
A really sweet selection of sandwiches is available at O’Tooles Bistro during lunch. The healthy “Cali Wrap” features bean sprouts, guacamole, healthy slaw, black beans, salsa, lettuce, tomato and cucumber. It’s great on a spinach wrap.

Real Italian Pizza at O'Tooles Cass Lake


One of the prominent features on The New O’Tooles Bistro & Pub menu are the incredible Real Italian Pizzas. Everything made fresh from scratch.
  • Our Dough - Made on premise from scratch daily with all natural ingredients and always hand stretched.
  • Our Pizza Sauce - Made from imported Italian San Marzano tomatoes, grown on the La Valle family farm and picked at their sun-ripened best in the lava rich soil around Mt. Vesuvius. No sugar, no funny business.
  • Our Vegetables - Purchased fresh from local Michigan suppliers and hand cut.
  • Our Meats - Local purveyors provide us with the best that Michigan has to offer. Fresh, natural and local whenever possible.

We have divided our Real Italian Pizzas into two distinct categories:
  • White Pizzas, made without tomato sauce. These begin with a slight drizzle of imported extra virgin olive oil before we layer on the cheese and select toppings.
  • Red Pizzas, begin with a bright red tomato sauce and then the cheeses and select toppings.
Some of our cool Pizza offerings:
  • Pizza Margherita - tomato sauce, fresh mozz, fresh basil
  • The Four Seasons - an italian classic divided into quarters with a unique topping on each quarter
  • The Spartan - spinach, fresh tomato, olives, red onion, feta

The thin crusted round pizzas are available in two sizes. 
A 12” with 6 slices at $7.95 for the basic cheese pizza (this is the size your local pizzeria calls a medium), and the 16” with 10 slices at $12.95 (what they call an extra large).
We are also making thicker crust detroit style square versions.

O'Tooles New Menu

I am very proud to announce my new position as Corporate Executive Chef for The New O'Tooles Bistro and Pub at Cass Lake in Waterford. Some of you may recall this location as the former home of the old Mitch's Restaurant of which I personally have many fond memories. Mitch’s was considered an area landmark and was always well run by my friends Tony Mitchell and his wife Joanne.
O’Tooles founder Keith Wadle purchased this property from the Grand Rapids based Schelde Restaurant Group which operated it first as the Freshwater Lodge and then as Cass Lake Roadhouse after purchasing it from the Mitchell Family. Mr. Wadle, his partner Michelle Patterson, and G.M. Robin Silveri all felt this location would best serve the community as a more family oriented restaurant. I was brought on board to help bring this to reality.
In taking on this new endeavor my primary focus is in transforming this Waterford location of O'Tooles from primarily a bar with food into a restaurant with a bar. Hence the new name, O'Tooles Bistro & Pub. The first order of business was in helping Chef de Cuisine Luis Antopia reorganize the current kitchen operation to maximize efficiency.  A few kitchen repairs came next, and after a couple months of kitchen overhaul, purveyor and product selections, re-training and menu development testing my new menu is finally here.
The new menu reflects a strong focus on purchasing products from local Michigan based sources and a distinct nod toward more healthful preparations. The influence of the Italian philosophy of fresh and simple flavors is of course evident. Due in no small part to my background in the diverse regional foods of Italy. 
The new menu features some rededicated O’Tooles favorites along with many new items and options. One important aspect of this new menu is a commitment toward Real Italian Pizza. To help achieve this Keith invested in some real cool but necessary pizza equipment and we brought in a master pizzaiolo, my brother Chef Michael Jepko, a legend among the pizza cognescenti. Mike came to us from his most recent gig at Tony Sacco’s Coal Fired Pizza in Novi where he was the opening kitchen manager. He has made pizza in just about every kind of oven imaginable from the dreaded conveyor belt and ceramic decks to coal-fired and authentic napoletana wood-burning brick ovens.

Other menu items which have already been very well received include the selection of vegetarian and vegan offerings, fresh house marinated oven roasted wings, hand patted fresh beef and turkey burgers, cool wraps and sandwiches at lunch, all new entrees and pastas at dinner with a great compliment of salads, soups and sides.
I have already recognized many old faces from other restaurants I have either owned or operated as a Chef and/or Manager. A few of which are:

  • Pizzeria Biga, Southfield. Opening Operations Manager, Media, Marketing.
With a generous re-investment by owner Keith Wadle we have accomplished much in the past couple of months with more good things are on the horizon...
